Apple Chicken Dijon

Ingredients:

4-6 Chicken breast halves, skinless and boneless

2 Tbsp. olive or vegetable oil

2 Cups apple juice

2 garlic cloves, minced

1 large sweet onion, thickly sliced

3 tsp. fresh thyme leaves (or 1 tsp. dried)

2 firm baking apples, thinly sliced

4 Tbsp. Dijon mustard

 

Directions:

If you are serving this dish with rice, begin by preparing the rice so that it will be done cooking by the time your chicken is ready.  Also, if you are serving carrots as a side dish, put them into a steamer basket so they are also heated in time.

If the chicken breasts are thick, begin by pounding them thin (place between wax paper first and pound with a heavy object such as a rolling pin). 

Heat the oil in a large pan.  Add the chicken and sauté until it is lightly golden brown (about 3 minutes each side). 

Add to the chicken: apple juice, garlic, and onion.  Stir together.  Cover the pan and cook on medium heat for about 10 minutes (until chicken is tender).

Take the cooked chicken breasts out of the pan and set aside on a platter, and keep them warm.

Heat up the remaining liquid in the pan, bringing it to a boil.  Stir in the mustard.  Add the apple slices.  Continue to stir while cooking on High Heat.  Cook until the apples are heated and slightly soft. 

Pour the sauce/apple mixture over the chicken.  Extra sauce can be used to pour over the rice side dish, if desired.

Serve with your favorite rice, and steamed carrots drizzled with honey .
