Recipe for Week #1 (Vegetarian Version)

Quick & Tasty Chili (and Baked Potatoes)

Ingredients:

1 Onion, chopped

2 Garlic Cloves, minced

1 Green Pepper, chopped

2 cans (14.5 ounces) diced tomatoes

1 small can tomato paste

2 tsp. chili powder

1 dash cayenne pepper (more can be added for adults that like it spicy)

1 can (15  ounces) black beans

1 can (15  ounces) pinto beans

1 can (15  ounces) kidney beans

 

Directions:

Combine all of the ingredients except the beans in a large pot. 

Bring it to a boil, and then simmer for 15 minutes.

Stir in the beans.

Simmer for 5 more minutes. 

 

Serve with baked Yukon Gold Potatoes (as a side, or use chili as a topping).
